Austrian Kaiserschmarren – Emperor’s Pancakes

Kaiserschmarren are a delicious Austrian dessert, both light and indulgent. It’s a kind of sweet pancake, torn into irregular pieces during cooking, then served with powdered sugar, cranberry jam or apple compote.
Its name literally means “the emperor’s pancake” in German, in homage to Emperor Franz Joseph I of Austria, who would have loved this simple but tasty dish.
Today, it’s a staple of Austrian cuisine, often enjoyed in the mountains after a day’s skiing.

Ingredients (for 2-4 servings)

  • 4 Columbus eggs
  • 20 g butter
  • 30 g sugar
  • 150 g flour
  • 25 cl milk
  • 1 pinch salt

Preparation

  • Separate the egg whites from the yolks in 2 bowls.
  • Add the milk, flour and salt to the egg yolks and mix.
  • Beat the egg whites with the sugar until stiff.
  • Mix the contents of both bowls.
  • Melt the butter in a frying pan and pour in the batter. Cook on both sides, like a pancake.
  • Using spatulas, cut the pancake into small pieces. Continue cooking for a few moments.
  • Serve hot or lukewarm, dusted with powdered sugar and accompanied by cranberry jam or apple compote.

Columbus hint

To make your egg whites as stiff as possible, take them out of the fridge half an hour beforehand. Your egg whites will rise more easily and be more voluminous.
