Kefta tagine

Kefta tagine is an iconic dish in North African cuisine, particularly in Morocco, where it plays an important role in family cooking. ‘Kefta’ refers to minced meat, usually beef or lamb, seasoned with a mixture of fresh herbs (parsley, coriander) and spices such as cumin, paprika and sometimes ras el-hanout. The meatballs are cooked in a sauce made from tomatoes, onions, olive oil and spices. At the end of cooking, eggs are broken into the sauce, where they poach gently, adding richness to the dish. Kefta tagine is cooked in the earthenware dish of the same name, which allows for slow, even cooking, concentrating the flavours.

Ingredients (serves 6)

  • 6 Columbus eggs
  • 500g tomatoes
  • 4 teaspoons tomato paste
  • 1 teaspoon sweet paprika
  • 1 pinch ginger
  • 1 pinch cinnamon
  • 2 teaspoons coriander
  • 20cl water
  • 750g minced meat
  • 250g onions
  • 1 teaspoon cumin
  • 2 teaspoons ras el-hanout
  • 1 pinch saffron
  • 1 pinch white pepper
  • 1 pinch salt
  • Olive oil

Preparation

  • Season the meat with salt and shape into evenly sized balls so that they cook evenly. Season the meat with ras el-hanout.
  • Dice the tomatoes and onions. Roughly chop the coriander.
  • Put all the spices in the tagine (cumin, paprika, white pepper, ginger, saffron, cinnamon, salt). Add the coriander and 4 teaspoons of tomato paste.
  • Add the tomatoes and onions. Then add 10 cl of olive oil and 20 cl of water. Cover and cook for 5 minutes over high heat.
  • After 5 minutes, add the meatballs, cover and simmer for 20 minutes over medium heat.
  • Open the tagine and crack 6 eggs into it. Cover again and simmer.

Columbus tip

You can opt for a vegetarian version without kefta.

If you don’t like coriander, replace it with flat-leaf parsley.
