Poffertjes, mini Dutch pancakes

Poffertjes, these little Dutch delicacies, are an original and delicious alternative to pancakes for celebrating Candlemas! These mini-pancakes, often served warm and covered in icing sugar, are even cuter and maybe even tastier than their big sisters, the crêpes. To make them, you’ll need a special pan with small cavities, a bit like a mini-waffle tin. The pastry is soft on the inside and slightly golden on the outside, making them a real treat.

Ingredients (for 4 servings)

  • 1 Columbus egg
  • 250 g wheat flour
  • 250 ml milk
  • About 250 ml water
  • 15 g fresh yeast (or 1 sachet dried yeast)
  • 50 g butter
  • Salt
  • Icing sugar

Preparation

  • Melt the butter and warm the milk. Dissolve the yeast in 3 tablespoons of milk.
  • Mix the flour, yeast and milk.
  • Add the water gradually. Adjust the amount of water to obtain a supple dough that holds together with the spoon.
  • Add the salt, butter and egg and stir well.
  • Cover with a damp cloth and leave the dough to rest for 60 minutes in a warm place (near a radiator or in an oven preheated to 50°C).
  • Grease the sides of the frying pan and heat. Pour the equivalent of a teaspoonful of batter into each well.
  • Leave to cook until the surface is dry. Turn over using a wooden skewer.
  • Serve warm with icing sugar.

Columbus hint

Poffertjes frying pans are easy to find on the internet, but you can also dispense with them by placing teaspoon-sized balls of batter in a standard crepe pan that has been greased and heated. Repeat the recipe in point 7.
