Ingredients (serves 2)

  • 5 Columbus eggs
  • 10 cl single cream (or milk)
  • 10 g butter
  • Chives
  • Parsley
  • Salt and pepper
  • 1 ts turmeric

Preparation

  • In a bowl, start by beating the whole eggs with a fork. Add the cream and chopped herbs. Keep a few sprigs of chives for decoration. Season with salt, pepper and turmeric and mix well.
  • In a non-stick frying pan, melt the fat and pour in the eggs. You can make a very thick rolled omelette, or several thinner wraps.
  • Allow to cook to your liking, for a firmer or softer omelette
  • Slide the cooked omelette onto a plate. Roll on itself and serve hot.
