Dal Tadka

Dal tadka is a true classic of Indian cuisine, appreciated for its simplicity and richness of flavor. The “dal” refers to the lentils, cooked until tender and flavorful, while the “tadka” refers to the blend of spices fried in oil, which infuses the whole with enchanting aromas. The main ingredients are coral lentils, garlic, ginger, curry, turmeric and a little chilli to spice things up.
Dal tadka is perfect with basmati rice or breads such as naan or chapati. Here’s a delicious variation with eggs!

Ingredients (for 3 servings)

  • 6 Columbus eggs
  • 2 garlic cloves
  • 1 piece ginger (about 2cm)
  • 1 onion
  • 1 drizzle sunflower oil
  • 1 tablespoon curry paste
  • 1 tsp turmeric powder
  • 1/2 teaspoon chili powder
  • 1 jar tomato flesh (400g)
  • 150 g coral lentils (raw)
  • 1 vegetable stock cube
  • 200 ml coconut milk
  • fresh cilantro or parsley
  • salt and pepper

Preparation

  • Finely chop the garlic, onion and ginger. Rinse lentils in a fine-mesh sieve. Prepare 500ml vegetable stock with a cube.
  • Heat a large frying pan over medium-high heat. Add the sunflower oil, garlic, onion, ginger, spices and curry paste. Fry for 2 to 3 minutes. Add the tomato flesh and sauté for a further 2-3 minutes.
  • Add the lentils, coconut milk and 3/4 of the vegetable stock. Simmer over medium heat, stirring regularly. Add more stock if necessary, until the lentils are tender (follow the cooking time indicated on the lentil packaging).
  • Add a little more stock (and coconut milk if you like) before adding the eggs, and mix well.
  • Make wells/holes in your dahl and pour in the eggs. Cook for about 6-7 minutes over medium heat, or until the whites are cooked.
  • Season with salt and pepper if necessary, and garnish with fresh cilantro or parsley before serving.
  • Serve with basmati rice, naan or chapati bread.

You can add vegetables to your dal to make it richer in vitamins and add a little color to your plate.
Vegetables such as carrots, spinach, pumpkin, cauliflower, green beans or peas are ideal.
