Peanut butter muffins

Peanut butter: love it or hate it! Originating in America, this spread is now just as popular here. Although peanut butter is usually eaten on toast, it can also be used as an ingredient in all sorts of preparations, like these muffins.

Ingredients (6 muffins)

  • 2 Columbus eggs
  • 125 g self-rising flour
  • 125 g soft butter
  • 125 g sugar
  • 2 tbsp peanut butter

Preparation

  • Preheat the oven to 175°C. 
  • Beat the butter until creamy. Add the yolks of the 2 eggs and mix well. 
  • Mix the flour and sugar and add to the butter mixture.
  • Then add 2 tablespoons of peanut butter, mixing well.
  • Fold in the stiffly beaten egg whites. 
  • Pour into the muffin tins and bake for 25 minutes. Check with a skewer.
