Mini quiches with broccoli, zucchini and peas

Ingredients (4 mini-quiches)
- 4 Columbus eggs
- 1 ready-to-use pastry (for ± 4 mini quiches)
- 150 ml fresh cream
- 80 g peas
- 1 zucchini
- 1/2 broccoli
- 50 g of parmesan cheese
- Nutmeg, salt and pepper
Preparation
- Preheat the oven to 180°.
- Cut the broccoli into florets and dice the zucchini.
- Blanch the broccoli, diced zucchini and peas for 2 minutes in boiling salted water. Rinse immediately under running water and let drain.
- Unroll the dough and fill it with several small shapes.
- Press the edges and make holes with a fork.
- Spread the vegetables over the dough.
- Beat the eggs with the cream. Season with salt, pepper and nutmeg. Spread this mixture over the vegetables and sprinkle with parmesan cheese.
- Bake the quiches for 35 minutes.
