Portuguese Kings Cake

If you are looking for a slightly original and tasty King’s cake, here is a recipe that should please you. It is the Portuguese “galette des rois”, called “Bolo Rei”, a soft brioche in the shape of a crown, generously filled with candied and dried fruits macerated in port wine. A delicious recipe that originated in Lisbon in the 19th century. And don’t worry, you can also make it without alcohol.

Ingredients: 

  • 5 Columbus eggs
  • 750 g flour
  • 30g yeast
  • 150g butter
  • 150g icing sugar
  • 150g candied fruit
  • 150g dried fruit
  • 1 lemon
  • 1 orange
  • 10cl of port wine
  • 1 teaspoon of salt
  • Sugar pearls
  • 1 ceramic bean

Preparation:

  • The day before, pour the candied fruit and dried fruit into a bowl. Cover with the port wine and marinate overnight.
  • Crumble the fresh yeast into a bowl and dissolve it with 10 cl of lukewarm water. Add 2 tablespoons of flour. Leave to stand for about 30 minutes.
  • Meanwhile, pour the soft butter into a bowl. Add the zest from 1 lemon and 1 orange to the butter. Add the icing sugar and add 4 eggs one by one, beating the mixture well.
  • Add the yeast, the remaining flour and the salt. Mix well to obtain a homogeneous and slightly elastic dough.
  • Drain the dried and candied fruit and add it to the dough. Form the dough into a ball. Place it in a bowl and cover it with a slightly damp cloth. Leave the dough to rest for a few hours until it doubles in size.
  • Form a crown. Place the bean in the cake and place it on a baking tray covered with baking paper. Leave the dough to rest again for about 1 hour.
  • Lightly whisk the yolk of the remaining egg and brush the crown it. Sprinkle with the sugar pearls and decorate with some candied fruit. Bake the cake for about 30 minutes in a preheated oven at 180°C. When the brioche is golden brown, take it out of the oven and let it cool down before enjoying it.

♥ Columbus tip

If you don’t like port wine or if you want to make this cake with children, replace the port wine with orange blossom water or grape juice for example.
