Eggs in a nest
Ingredients (2 eggs in a nest)
- 2 medium carrots (or one large one)
- ½ courgette (yellow or green)
- 2 Columbus eggs
- pepper, salt, nutmeg (+ Espelette pepper – optional)
- olive oil
Preparation.
- Cut the courgette and carrot into strips using a spiral cutter.
- Heat a little olive oil in a pan. Fry the carrot and courgette strips for 1 to 2 minutes, stirring gently. Add salt and pepper.
- When the vegetables have softened a little, divide the strips into 2 batches and make 2 nests in the pan. In the middle of each nest, make a hole big enough for an egg.
- Break an egg and place it in the centre of the nest. Cook on a low heat until the fried egg is cooked and season with salt, pepper, nutmeg and Espelette pepper.
