Vegetarian wrap with Greek flavours

There are many different wrap recipes. The filling generally consists of hot or cold meat, accompanied by lettuce, diced tomatoes, cheese and a sauce. Although the origins of the wrap lie in Mexican cuisine, here is a vegetarian version with a Greek flavour. Be careful: the art of a well-made wrap lies in the folding! Eat hot on the spot or cold to take away.

Ingredients for 2 servings

  • 3 Columbus eggs
  • 1 tablespoon olive oil
  • a few salad leaves
  • 2 tbsp tzatziki sauce
  • 2 wholemeal tortillas (18 cm)
  • 10 cherry tomatoes
  • 1/2 red onion
  • 2 tbsp crumbled feta cheese
  • dried oregano
  • salt and pepper

Preparation

  • Wash the lettuce and cut into strips. Wash the cherry tomatoes and cut into 4. Slice the red onion.
  • Heat the oil in a large non-stick frying pan over a medium heat. Add the beaten eggs, salt, pepper and oregano.
  • Reduce the heat and continue cooking. When the eggs begin to set, gently lift them from the sides and bottom of the pan with a spatula to form large, soft lumps.
  • Spread each tortilla with the tzatziki, making a strip down the middle of the tortilla and leaving a few centimetres free at the bottom. Top with the salad, scrambled eggs, tomatoes, onion and feta.
  • Fold the uncovered end of the tortilla over the filling, then fold the sides over so that nothing falls out.

Columbus tip

For more colour and a stronger Greek accent, add black Kalamata olives.
