Caesar salad

The basic ingredients for a Caesar salad are romaine lettuce, hard-boiled eggs, a few croutons, Parmesan cheese… and of course the famous Caesar dressing. Here is a main course version with chicken breast.

Ingredients

  • 4 Columbus eggs
  • 400 g chicken breast
  • 2 Romaine salads
  • 75 g Parmesan cheese
  • 2 cloves of garlic
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire or English sauce
  • 1 teaspoon mustard
  • olive oil
  • 3 slices stale bread
  • salt and freshly ground pepper

Preparation

  • Wash the romaine lettuce, spin-dry and cut into strips.
  • Cook 2 eggs in boiling water for 7 minutes. Plunge them into cold water and shell them.
  • Separate the whites from the yolks of 2 eggs. Keep the whites for another use.
  • Mix the egg yolks, 50 g grated Parmesan, peeled garlic cloves, lemon juice, mustard and Worcestershire sauce with 6 tbsp olive oil. Season with salt and pepper. Set aside.
  • Thinly slice the chicken breasts and grill in a pan with a drizzle of olive oil, then set aside.
  • Fry the diced bread in a little olive oil.
  • Arrange the salad, chopped hard-boiled eggs, chicken breast and the rest of the Parmesan cheese in shavings on the plates.
  • Serve with the homemade Caesar dressing.
