Stuffed omelette with smoked salmon and spinach

Create a nutritious meal that can be ready in 15 minutes and impress your guests. Stuff an omelette with smoked salmon, fresh spinach and herb cheese. By combining the salty flavor of smoked salmon with the freshness of spinach and the creaminess of herb cheese, you’ll create a harmonious taste experience.

Ingredients (for 2 people)

  • 6 Columbus eggs
  • 100 ml milk (optional)
  • 100 g smoked salmon, cut into strips
  • 100 g fresh baby spinach
  • Olive oil
  • 75 g herb cheese (or fresh goat’s cheese)
  • Salt, pepper and nutmeg
  • Turmeric
  • Fresh dill or chives for garnish (optional)

Preparation:

  • Beat the eggs in a bowl and add the milk. Season with a little salt, pepper, nutmeg, a teaspoon of turmeric and any other spices you like.
  • Heat a little fat in a large frying pan over medium-high heat.
  • Pour the egg mixture into the pan and cook gently until the top is almost dry.
  • Spread the herb cheese and spinach leaves evenly over the omelette. Place the smoked salmon strips on half the omelette. Using a spatula (or two) to fold the omelette in half, making sure that the filling doesn’t spill over and the omelette doesn’t tear.
  • Leave the omelette to cook for a further minute, until the spinach is slightly softened by the heat of the omelette.
  • Carefully slide the stuffed omelette onto a large plate or board, cut in half and garnish with fresh dill or chives.

This recipe is also delicious with fresh avocado, sautéed mushrooms or fresh cherry tomatoes on the side.
