Anti-waste cake recipe with leftover pastries

We all sometimes have leftover bread, croissants, various pastries or “cramique” bread. Stop wasting them! There’s a delicious recipe that lets you recycle your dried leftovers into a delicious cake that everyone will love.
To make it, all you need are a few ingredients in addition to the bakery leftovers: eggs, sugar, butter, milk and a little something extra to give it character, like walnuts, sultanas or chocolate. We opted for chocolate!

Ingredients (serves 6)

  • 3 Columbus eggs
  • 250g leftover bread, croissants, …
  • 400ml milk
  • 30g butter
  • 50g sugar
  • 100g dark chocolate

Preparation

  • Preheat your oven to 180°C.
  • Soak the leftover bread, croissants, various pastries,… in the milk for a quarter of an hour to soften.
  • Meanwhile, mix together the eggs and sugar.
  • Melt the butter for 30 seconds in the microwave.
  • Add it to the egg mixture.
  • Coarsely crush the leftover bread with a potato masher before mixing with the egg mixture.
  • Break the chocolate into small pieces and add to the mixture.
  • Butter and flour a cake tin. Pour in the mixture.
  • Place in the oven for around forty minutes. Leave to cool before removing from the tin.

Columbus tip

Replace some of the sugar with vanilla sugar or add a few drops of liquid vanilla for baking.
