Wrap-omelette with tuna and vegetable mix

Ingredients (serves 1)

  • 2 Columbus eggs
  • 1 tablespoon skim milk
  • handful fresh parsley
  • 1 tablespoon Becel light liquid
  • 100g zucchini (1/3)
  • 50g iceberg lettuce
  • 100g red bell pepper
  • 1/2 onion (30g)
  • 55g (1/2 can) tuna in brine
Dressing :
  • 1 tablespoon Greek yogurt (low-fat, 0% fat)
  • 1 teaspoon tomato ketchup
  • 1 teaspoon diet mayonnaise
  • a squeeze of lemon juice
  • pepper (and salt)

Preparation

  • Beat the eggs with the milk and 3/4 of the chopped parsley until there’s enough air. You can judge this by the bubbles that appear. Fry to a fine omelette. Let cool.
  • Grate the zucchini into very fine ribbons using a vegetable peeler. When you see the seeds, you can stop. You won’t be using the seeds. Chop the onion, cut the bell pepper into smallcubes and cut or chop the iceberg lettuce into small pieces. Mix everything together in a bowl.
  • Carefully drain the tuna and toss with the salad.
  • Mix the Greek yoghurt with the mayonnaise and tomato ketchup for the dressing. Season with lemon juice, pepper (and a little salt, if necessary).
  • Mix the vinaigrette with the salad. Place a line of vegetables on the wrap and gently roll it up. Place the rest of the salad on the plate next to the wrap. Finally, sprinkle with the remaining chopped parsley.
