Dietetic Galette des Rois
Maintaining the tradition of the galette des rois and its good resolutions at the beginning of the year is possible and that is what this tasty and light recipe proposes.
Ingredients (for 6-8 people)
- 5 Columbus eggs
- 440 g flour
- 200 g plain yoghurt
- 175 g sugar
- 200 g almond powder
- 40 g agave syrup
- 20 cl soya cream
- 3 tsp bitter almond
- Salt
Preparation
- Put the flour, two whole eggs, yoghurt, sugar and two pinches of salt in a bowl and knead the dough.
- Form the dough into two balls of similar size, then wrap them in cling film and place in the fridge for 1 hour.
- Roll out each ball of dough on a floured work surface to form two nice discs of dough.
- Preheat the oven to 210°C.
- Prepare the frangipane by mixing the almond powder with two whole eggs, the agave syrup, the bitter almond and the soya cream.
- Pour the frangipane onto one of the two pastry discs, leaving a 1 cm border, then cover with the second. Seal the edges of the two pastries well.
- Beat the yolk of the 5th egg in a bowl with a teaspoon of water. Brush the cake with this mixture and draw pretty lines on the top with the tip of a knife.
- Bake in the oven for 25 minutes and remove the cake when it is golden brown.
