Sweet potato pie

Originally from the Amerindians, the sweet potato was used exclusively in ethnic recipes. Today it is very much in fashion, and has found its way into European cuisine. It’s true that with its sweetness, it appeals to all ages.

Ideal to incorporate the sweet potato filling if you made our baked sweet potatoes stuffed with eggs.

Ingredients (4 servings)

 

  • 2 Columbus eggs
  • 1 roll shortcrust pastry
  • 150 g brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon clove powder
  • 1/4 tbsp grated nutmeg
  • 1 pinch salt
  • 300 ml milk
  • 300 g sweet potatoes (+/- 2 big pieces)

Preparation

  • Cook the sweet potatoes in boiling water for 30 mins. Peel and mash them.
  • Roll out the pastry and line a tart tin.
  • In a saucepan, beat the eggs with the milk. Add the sugar, spices and salt.
  • Stir in the sweet potatoes and mix until the pastry is smooth. Adjust the amount of milk to obtain the desired consistency.
  • Put the saucepan on the heat and bring the mixture to the boil.
  • Pour the mixture over the pastry.
  • Bake in the oven for 15 minutes at 210°, then again for 15 minutes at 180°.
  • Leave to cool and eat the tart warm.

Columbus tip

To save time, you can cook the sweet potatoes in the microwave while the oven is heating. Punch some holes in the potatoes and place them in a bowl with a little water. Leave them to cook in the microwave for about 10 minutes, turning them over halfway through.
