Turkish Çilbir

Çilbir, Turkish poached eggs

Çılbır is a traditional Turkish dish often served for breakfast or as part of a light meal. Appreciated for its simplicity and rich flavour, it consists mainly of a poached egg on a bed of plain yoghurt, accompanied by a melted butter sauce flavoured with garlic and paprika. There are records of Çılbır being eaten by Ottoman sultans as early as the 15th century. A true symbol of Ottoman cuisine, Çılbır embodies the perfect fusion of simplicity, tradition and authentic flavours.

Ingredients (for 1 serving)

  • 2 Columbus eggs
  • 3 tbsp Greek yoghurt
  • 1 garlic clove
  • 1 lemon (zest + 1/4 of the juice)
  • 20g butter
  • 2 tbsp olive oil
  • Paprika and cayenne pepper
  • salt and pepper
  • Chopped hazelnuts
  • Pumpkin seeds
  • Parsley

Preparation

  • Mix the yoghurt with the pressed garlic clove, the zest and lemon juice, salt and pepper and parsley. Arrange on the plate.
  • Heat the butter, olive oil, paprika and cayenne pepper in a frying pan. Pour the mixture onto the plate.
  • Cook your poached eggs and place them on the plate. Then add the chopped hazelnuts, pumpkin seeds and parsley
  • Serve with a slice of bread.
