Ghost Meringues
No successful Halloween without little ghosts. Make them yourself out of meringue and enjoy them with your family.
Ingredients (for 6 people)
- 70 g Columbus egg whites
- 70 g icing sugar
- 70 g caster sugar
- 3 pieces of dark chocolate
Preparation :
- Sift the icing sugar over a bowl.
- With an electric whisk, start beating the whites gently and add a little caster sugar when they start to foam.
- Add the caster sugar a little at a time, while increasing the speed of the whisk. Beat until the meringue is glossy and not runny.
- Add the sifted icing sugar and fold in gently with a spatula.
- Put the meringue into a piping bag. Form the meringues into ghosts (pointed heaps) on a baking tray lined with baking paper.
- Bake for 1 hour in an oven preheated to 85°C and leave for another hour in the oven when not in use.
- Melt the chocolate, leave to cool a little, then shape the mouth and eyes using a wooden stick.
