Cloud eggs
Take your breakfast to new heights with these delicious cloud eggs.
Ingredients
- 4 Columbus eggs
- 4 slices of wholemeal bread
- salt and pepper
Preparation
- Break the eggs and keep the yolks (intact) in a separate bowl.
- Beat the egg whites and season with a little salt and pepper.
- Preheat the oven to 150°C.
- Line a baking tray with baking parchment and shape the beaten egg whites into 4 cloud-like mounds. Make a hollow in the middle the size of an egg yolk, using the back of a spoon for example.
- Bake these mounds of egg white in the oven for 4 to 5 minutes.
- Then briefly remove the baking tray from the oven and place an egg yolk in each cell. Bake the clouds for a further 2 minutes. You can also choose to bake the egg yolks from the start if you prefer them hard.
- Meanwhile, toast the slices of bread.
Columbus tip
You can also fry the eggs in a pan instead of in the oven. Repeat the above steps and put a lid on the pan.
