Quiche with pumpkin and chestnut

Pumpkin is the star of our autumn plates. It can be prepared in all sorts of ways, from the most original to the most traditional: in a baked gratin with potatoes, in an easy soup or in a quiche. Rich in potassium (323 mg per 100 g), it is excellent for regulating blood pressure and the transmission of nerve impulses to the brain, making it an ideal ally against hypertension.

Ingredients

  • 1 roll of shortcrust pastry
  • 500 g pumpkin, peeled and seeded
  • 200 g cooked chestnuts
  • 150 g raw ham
  • 4 Columbus eggs
  • 15 cl fresh cream
  • 15 cl milk
  • 2 tbsp. flour
  • salt and pepper

Preparation 

  • Dice the pumpkin and cook for 15 minutes in boiling salted water, drain well and leave to cool.
  • Unroll the pastry in a pie tin and lightly flour the base.
  • Coarsely chop the chestnuts and the raw ham.
  • Preheat the oven to 180°C.
  • In a bowl, beat the eggs with the cream and milk.
  • Add salt and pepper to taste and add the chestnuts, ham and pumpkin.
  • Pour over the pastry and bake for 30 minutes.
  • Serve the quiche hot with salad.

Columbus tips

For an even more autumnal recipe, you can add mushrooms and for a veggie version you can leave out the ham.
