How to conserve unused egg yolk/white?

A beaten egg, leftover white or unused yolk can be kept for another 2 to 3 days in the fridge, but if you cannot use it within that time, it is best to freeze it.

Egg whites
Egg whites can be kept for up to 6 months in the freezer.
Egg yolk
Egg yolks can also be frozen, but this changes the structure of the yolk. To avoid this, add a pinch of sugar or salt, depending on the purpose. This lowers the freezing point, reduces the size of the crystals formed and therefore causes less damage to the structure of the yolk.
Yolks can be stored for up to 3 months in the freezer.
Whole egg
Freezing eggs in their shells is unfortunately not a good idea. Uncooked eggs explode and hard-boiled eggs take on a rubbery texture. It is best to crack and beat them before freezing.
You can store them this way for up to 6 months.

Put the eggs in a jar or bag and remember to write down the date.
Let the eggs thaw in the fridge before using them and only for cooked dishes.
