What are the egg sizes?
You’ve probably noticed that eggs are graded according to several sizes, going from small to extra large. In Belgium, all class A eggs are sorted according to weight, not size or shape. sSo eggs in the same container may not be exactly the same size, but they all belong to the same weight class.
The AFSCA (Belgian Federal Agency for the Safety of the Food Chain) defines 4 weight classes, which you can read on the packaging:
S for small: 43 to 53g
M for medium: 53 to 63g
L for large: 63 to 73g
XL for extra large: over 73g
The words “different sizes” on some packs mean that the weight of the eggs varies.
Unless you’re told otherwise, most recipes are based on medium-sized eggs, and it’s certainly when you want to cook a perfectly boiled egg that you need to pay the most attention to egg size.
At Columbus, our eggs are carefully graded. We sell both medium (M) and large (L) eggs in the same packaging.
We also offer even larger eggs under the name JUMBO, which correspond to a size L and XL.
They are available in packs of 4 or 6 and can be identified by the Jumbo logo on the packaging.
